The term "organic wine" means that the vines are cultivated according to organic farming specifications (no synthetic pesticides, respect for biodiversity). Our estate cultivates its vines in this way, on deep clay-limestone soil, in the Gaillac terroir in southwestern France.

• P'tit Roques Blanc: oysters, crab croquettes, tuna carpaccio, breaded pork skewers.
• P’tit Roques Rosé: vegetable skewers, marinated fish, spicy dishes (chicken skewers with yakitori sauce, sautéed ginger, Thai or Korean cuisine).
• P’tit Roques Rouge: charcuterie, beef tataki, grilled meats, blue cheese with azuki bean paste.
• Bonaval: fish or white meat in sauce, pan-fried scallops, osso buco, gnocchi with mushrooms and Espelette pepper.
• Las Combes: grilled red meat or meat in sauce, barbecued kefta skewers, minced beef with sun-ripened vegetables.
• 431: sea bream carpaccio, raw or fried oysters, tagliatelle with crayfish tails in saffron or truffle oil, goat's or sheep's cheese.
• Ramène Ta Puech: As an aperitif, on its own or in a cocktail (suggestion: Cointreau, cane sugar syrup, lemon).
• Le Prat: As an aperitif, dessert, or with a meal such as a peach and buffalo mozzarella caprese salad, tempura, grilled sea bream, or Milanese escalope.

It depends on the vintage: some are best enjoyed young for their fruitiness, while others (aged wines) can be kept for 3 to 5 years.

• Bonaval, Le Prat: drink now or keep for 3 to 5 years.
• Las Combes, 431: drink now or keep for up to 5 to 7 years.
